Description
Lead the wine program by advising guests on pairings, executing proper service, curating and managing the list and cellar, training staff, and ensuring compliant alcohol service.
- • Verify guests' legal drinking age before recommending or serving alcohol.
- • Present the wine list and explain regions, varietals, vintages, and styles.
- • Recommend wine pairings tailored to menu items, tastes, and budgets.
- • Take and record wine and beverage orders, entering them into the POS or cellar log.
- • Check back to confirm guests are satisfied with selections and replace flawed bottles.
- • Open, present, decant, and pour wines using proper service techniques.
- • Select appropriate stemware and manage serving temperatures and chilling.
- • Prepare and oversee by-the-glass, pairing, and tasting flight programs.
- • Inform guests of featured pours, limited allocations, and new arrivals.
- • Coordinate with the kitchen on pairing menus and special events.
- • Curate, price, and update the wine list in coordination with management.
