Description
Assist registered dietitians in clinical nutrition care and foodservice operations. Prepare meals per diet orders, perform nutrition screening and education under supervision, and support menu planning, quality assurance, and cost control.
- • Prepare and portion meals following recipes and diet orders; determine quantities for patient and cafeteria service.
- • Verify diet accuracy on trayline and oversee meal service for timeliness and quality.
- • Analyze and standardize recipes; test new menu items and products.
- • Assist with menu planning to meet therapeutic diets, preferences, and regulatory guidelines.
- • Perform nutrition screening; collect and document dietary histories and intake data for RD review.
- • Monitor and document patients’ intake, weight, and tolerance; report variances to the RD.
- • Provide basic nutrition education and counseling under RD supervision.
- • Participate in patient care rounds and communicate nutrition care plans with the team.
- • Assist with cost tracking, inventory, and waste reduction; support cost control procedures.
- • Maintain sanitation, safety, and HACCP records; conduct quality audits.
- • Train foodservice staff and assist with orientation and in-service education.
- • Help develop work schedules and assign daily tasks for foodservice staff.
- • Support dietitians with research, data collection, and departmental projects.
- • Initiate or route referrals to dietitians and other services per protocol.
