Plan, direct, and coordinate back-of-house operations to ensure safe, efficient food production, quality, staffing, and cost control.
  • • Taste and evaluate dishes to ensure flavor, texture, and consistency standards.
  • • Investigate and resolve kitchen-related quality issues and collaborate on guest complaints.
  • • Schedule and receive deliveries; verify product quality, temperatures, and quantities.
  • • Monitor prep methods, portioning, plating, and ticket timing to meet standards.
  • • Track food cost, labor, and kitchen budgets; review transactions for compliance.
  • • Create BOH schedules and assign stations and duties.
  • • Enforce health, food safety, sanitation, and fire codes in the kitchen.
  • • Coordinate line and prep workflows to ensure timely, economical production.
  • • Maintain sanitation, temperature, and cleaning logs required by regulators.
  • • Set and enforce kitchen performance, quality, and safety standards.
  • • Forecast product usage and plan orders for food and supplies.

  • • Monitor menu mix, waste, and margins to identify low-performing or costly items.
  • • Assess BOH staffing needs and participate in hiring.
  • • Schedule and oversee equipment maintenance, repairs, waste removal, and pest control.
  • • Implement and enforce allergen controls, HACCP, and cross-contact prevention.
  • • Collaborate on menu planning, specials, and production schedules based on demand and cost.
  • • Coordinate kitchen production and catering prep for banquets and events; finalize BOH details.
