Prepare, season, and cook meals in dining cars or crew kitchens on trains, working safely in a compact, moving galley. Plan route-based menus, manage inventories between commissary stops, and coordinate with onboard service staff while meeting railroad and food-safety standards.
  • • Coordinate and supervise galley and dining car staff to meet schedule-driven service.
  • • Turn or stir foods to ensure even cooking in a moving galley.
  • • Season and cook food according to recipes and route-specific menus.
  • • Observe and test foods for doneness by tasting, smelling, or probing.
  • • Weigh, measure, and mix ingredients using compact galley equipment.

  • • Prepare salads, relishes, and hors d'oeuvres for quick service.
  • • Maintain records of inventory, meal counts, temperatures, and costs for each run.
  • • Set and price menu items within company policies and passenger demand.
  • • Inspect, clean, and sanitize galley areas; secure tools and equipment for train movement.
  • • Regulate and monitor ovens, grills, and warmers to hold safe temperatures during motion and power transitions.
  • • Rotate stock, check quality, and label items to ensure freshness throughout the trip.
  • • Follow railroad and food-safety protocols, including emergency and spill procedures in the galley.
