Description
Execute menu items on the line by preparing, seasoning, cooking, and plating dishes to spec during service. Set up, stock, and break down assigned station; follow recipes, portion standards, and food-safety procedures. Coordinate ticket timing with other stations and support inventory rotation.
- • Set up, stock, and break down assigned line station.
- • Turn or stir foods to ensure even cooking.
- • Season and cook food according to recipes, specs, and chef direction.
- • Observe and test foods for doneness by tasting, smelling, or checking temperature.
- • Weigh, measure, and mix ingredients using kitchen scales and equipment.
- • Portion, arrange, and garnish plates to restaurant standards.
- • Bake, roast, grill, sauté, broil, and steam meats, fish, vegetables, and other foods.
- • Wash, peel, cut, and prep produce and proteins for service.
- • Slice, carve, or trim cooked meats for hot or cold service.
- • Coordinate ticket timing with other stations and the expediter.
- • Assist other cooks and stations during rush periods or when needed.
- • Monitor and regulate temperatures of ovens, broilers, grills, fryers, and roasters.
- • Label, date, rotate, and store food to ensure freshness and minimize waste.
- • Clean and sanitize station, tools, and prep areas to meet food-safety standards.
- • Maintain par levels; restock from storage and alert chef to low inventory.
- • Follow allergy, dietary, and cross-contamination protocols.
- • Keep prep lists and temperature logs as directed.
- • Prepare basic sauces, relishes, and appetizers as assigned.
- • Communicate with chefs on specials, prep needs, and station readiness.
