Description
Formulate, churn, and serve ice creams, gelatos, sorbets, and frozen desserts for menus or retail. May create seasonal flavors, order supplies, manage inventory and costs, price items, and ensure food safety and equipment sanitation.
  • • Churn bases and fold in mix-ins for uniform texture and distribution.
  • • Balance recipes and pasteurize ice cream, gelato, and sorbet bases.
  • • Taste and assess texture, overrun, and Brix to verify quality.
  • • Weigh, measure, and blend dairy, sugars, stabilizers, and flavors.
  • • Scoop, portion, and garnish cones, cups, and plated desserts.
  • • Assist teammates and cover stations during rush periods and events.
  • • Prepare inclusions and components such as sauces, cookies, brownies, and pralines.
  • • Wash, peel, macerate, and puree fruits and nuts for bases and swirls.
  • • Forecast demand; requisition ingredients and pull stock from cold storage.
  • • Hand-form, cut, and decorate ice cream cakes and novelties.
  • • Coordinate and supervise production assistants and scoopers.
  • • Plan seasonal flavor lineups and specials with management, considering costs.
  • • Age bases and harden product following regulatory and HACCP requirements.
  • • Bake waffle cones and cookie wafers as needed.
  • • Cook caramels, fruit compotes, and nut brittles for toppings and variegates.
  • • Maintain production logs, recipes, and inventory and cost records.
  • • Plan and price flavors, cakes, and novelty items.
  • • Clean and sanitize batch freezers, pasteurizers, wells, and work surfaces.
  • • Monitor pasteurization, aging, hardening, and holding temperatures.
  • • Check freshness and quality of dairy, fruit, and inclusions; rotate stock.
