Description
Produce and condition beer while performing standardized qualitative and quantitative tests to determine the physical and chemical properties of water, wort, and finished beer. Includes brewers who assist in recipe development, process optimization, quality control, sanitation, fermentation management, and packaging operations.
  • • Conduct standardized tests on water, wort, and beer to verify SRM, IBU, gravity, pH, ABV, and microbiological compliance.
  • • Collaborate with the head brewer and quality team on recipe development, production technology, and quality control.
  • • Calculate grain bills, hop schedules, water chemistry, adjuncts, and target yields using brewing math.
  • • Record batch data and lab results; prepare brew logs, trend charts, and production reports.
  • • Analyze sensory and lab data to release, adjust, or rework batches against brewery standards.
  • • Perform sensory evaluation of wort and beer; lead or join tastings to confirm flavor specifications.
  • • Use a microscope to assess yeast health and contaminants; perform cell counts, viability staining, and plating.
  • • Mill and mash grains; boil and whirlpool; add hops and adjuncts; blend beers as required.
  • • Verify packaging quality by checking fill levels, seam/crown integrity, torque, dissolved oxygen, and CO2 volumes.
  • • Order and manage inventories of malt, hops, yeast, CO2, chemicals, and lab supplies.
  • • Maintain production and compliance records for quality audits and alcohol regulations (e.g., TTB and state reports).
  • • Monitor and control mash, fermentation, conditioning, and cold-side temperatures and pressures.
  • • Clean, sanitize, and CIP/SIP brewhouse, tanks, lines, and packaging equipment; calibrate meters and sensors.
  • • Train cellar, packaging, and junior brewing staff on SOPs, safety, and sanitation.
  • • Propagate and harvest yeast; prepare and incubate slides or plates for microbiological testing.
  • • Supervise brewing or cellar shifts and coordinate with packaging and quality teams.
