Description
Mix, scale, and develop dough for breads, rolls, and pastries, controlling ingredients, mixing parameters, and fermentation to meet quality and production standards.
- • Weigh and scale flour, water, yeast, salt, fats, and inclusions per formulas and batch sheets.
- • Load ingredients into mixers and set time, speed, and sequence to achieve target dough development.
- • Monitor dough temperature, gluten development, hydration, and texture; adjust water, mix time, or speed as needed.
- • Prepare and maintain pre-ferments and starters (sponge, poolish, biga, levain) per schedule.
- • Record batch data, temperatures, lot numbers, and adjustments on production logs.
- • Check quality and freshness of flour, yeast, and other inputs; verify lot codes and specs.
- • Operate dough handling equipment such as bowl lifts, dividers, rounders, sheeters, and laminators.
- • Portion, pre-shape, and rest dough; place in tubs, trays, or pans for proofing or retarding.
- • Set and monitor proofer and retarder conditions and fermentation times.
- • Add seeds, nuts, fruits, or other inclusions at appropriate mix stages; fold or laminate as required.
- • Coordinate dough output with makeup and baking teams to meet production schedules.
- • Clean and sanitize mixers, bowls, tools, and work areas; follow food safety and allergen controls.
- • Adjust formulas or batch sizes to match daily demand and minimize waste.
- • Inspect dough for consistency, gas development, and defects; escalate issues and correct in process.
- • Maintain inventory of dough ingredients; request or receive supplies as needed.
- • Calibrate scales and check equipment for safe operation; report and assist with minor maintenance.
- • Follow GMPs, HACCP, and company procedures for labeling, storage, and handling.
- • Assist in testing and improving dough formulas, hydration levels, and process parameters.
