Description
Operate batch freezers to freeze and aerate mixes into finished product, controlling temperatures, mix feed, overrun, and cycle times; monitor instruments, adjust controls, document batches, and perform sanitation and basic maintenance.
- • Set batch freezer parameters such as cycle time, dasher speed, overrun, and discharge temperature to meet targets.
- • Assemble and connect hoses, fittings, and sanitary clamps on mix and discharge lines using hand tools.
- • Defrost, scrape, or chip frost and frozen product from barrels and hoppers to prevent accumulation.
- • Weigh and fill containers to target weights; adjust filler heads or discharge valves for accurate fills.
- • Pre-mix or temper ingredients; stir or agitate mixes to ensure even cooling and prevent coagulation.
- • Start dasher, agitator, beater, and scraper blades to incorporate air and prevent sticking.
- • Measure or weigh ingredients and load tanks, hoppers, or adders per formula.
- • Place containers, lids, or liners for filling; remove and stage product after batch discharge and hardening.
- • Clean and sanitize equipment; flush lines with cleaning solutions or steam and apply sanitizers per SOPs.
- • Sample product for overrun, Brix, pH, and temperature using refractometers, hydrometers, and pH meters; adjust as needed.
- • Monitor gauges, flowmeters, thermometers, and product appearance; adjust controls to maintain feed rate, viscosity, temperature, and pressure.
- • Record batch data including temperatures, start/stop times, ingredient amounts, and test results.
- • Read panel indicators for temperature and density; open or close valves to achieve specified mix and refrigerant flow.
- • Clear jams or ice buildup; troubleshoot issues and notify supervisors as needed.
- • Start pumps, mixers, and refrigeration circuits; open valves to charge refrigerant or admit product mix.
